This classic Italian candy called Torronne or Nougat in French, is handmade, utilizing whole Organic Pistachios, homemade Organic pistachio paste, to accentuate the flavor, Lavender honey, California Almonds, cage free eggs, and Azyme paper( edible paper used at the surface of the nougat).
We use an old recipe proper to the city of Montelimar in France, this ancestral technique and recipe requires long and slow cooking time in copper kettle, resulting in a unique texture that is not hard but chewy and slowly melts in your mouth revealing the harmonious flavors of nuts and honey.

A sweet made of sugar, honey and nuts. The origin of this confection is unknown, but it can be traced back from the antiquity. The recipe for the Roman sweet “Nucatum” ( from Latin nux, nuts) described by Apicus, was based on honey, walnuts and eggs. Nougat appeared in Cremona Italy in the early 15th century, called “Torrone”.
In the south of France The word Nougat came From the old Provençal “nogat” nut cake also based on walnuts. In about 1650, the Almond tree was introduced in the Vivarais region Montélimar ( France ) became the manufacturing center of Nougat based on almonds (Larousse Gastronomique).
